I've also made this as mini-meatloaves on a rack covered in tinfoil with some hole for drainage - worked great and was awesome. For the glaze, even though I know you're not a fan of pre-made stuff, the merlot sauce from tastefully simple makes a fantastic glaze - glossy, slightly sweet, tangy, smokey and beefy.
